A conversation between sushi master Jiro Ono (owner of Tokyo’s Sukiyabashi Jiro and subject of the acclaimed documentary “Jiro Dreams of Sushi”) and our own René Redzepi. The informal talk took place in January of 2015. Jiro-san says it will probably be his last.

We hope you’ll enjoy the footage and continue to follow along as we enter a new chapter here at MAD.

We’d like to thank Masuhiro Yamamoto and Namae Shinobu for their generosity throughout our time in Japan, and for making this interview possible. We’d also like to thank David Gelb and Jay Strell for their help.
