As you probably know, we let 2015 pass without hosting our annual gathering in Copenhagen. We spent the past eighteen months thinking hard about what MAD is, and what we want it to be. We listened to lots of opinions and considered what needs to change in order for MAD to spark real action and fuel new initiatives in our industry.

Now, we’re excited to finally let you know that the MAD Symposium will once again take place in Copenhagen this summer, on August 28th and 29th.

MAD5 will be about Tomorrow’s Kitchen.

This year’s participants will be pushed to ask themselves:

What do we hope our kitchens will be like in the future? And what can we do today to make those dreams a reality?

Like past MAD Symposiums, there will be keynote speakers and presentations, but MAD5 will be even more collaborative and engaging. This year, we have invited guests to not only to attend, but to propose and lead talks and discussions; to become active participants in the symposium.

How do you decide who gets tickets?
We work with a broad range of selection criteria. We will try to select applicants so that the participants at MAD5 are all interested in exploring the same questions but represent a wide range of points of view, geographies, roles inside and outside the kitchen. We are looking for people who are really committed to the industry, people who feel the urgency of improving the kitchen in 2016 and also understand the importance of the long term. As always, MAD is open to anyone from the restaurant world, but we also want to learn from those outside the trade, and encourage anyone with an interest in changing cooking for the better to apply for a ticket. Unfortunately, we cannot provide individual feedback. But please sleep safe in the knowledge that all entries will be thoroughly considered.

Do you issue press passes?
We do not extend any press passes – free or otherwise – but we do encourage members of the press to apply for MAD5 regardless.

Can I volunteer to help out?
We’re honored by the many requests for volunteering to be part of running MAD. However, we’re at full capacity for MAD5.

How many participants will there be at MAD5?
This symposium will be smaller than other years. We will welcome 300 participants.

How do I get to and back from the MAD5 site?
We will organise morning and late afternoon boats between Nyhavn in central Copenhagen and the site on Refshaleøen. A pack with information will be sent your way once we receive your payment. So to keep it simple: Read the pack and turn up at the time and place specified. We’ll take care of the rest.

Where is Refshaleøen?
It’s a peninsula in Copenhagen. Have a look here.

How long will the days be?
We’ll bring you by boat to Reshaleøen in the morning for breakfast, and back to the city in time for dinner. In the meantime, you’ll stay with us for the day (unless you fancy a very long – but scenic – bike-ride).

What happens on Monday night?
After the lights go out, we all get together for a big dinner to conclude the symposium. Access to the dinner is included in the ticket price.

What happens on Friday/Saturday/Sunday night?
We’ll leave the evenings open for you to relax, read a novel or visit the spa. But do keep an eye out for the many things local chefs might put on in conjunction with MAD5.

What should I wear?
In past years, we have seen everything from torrential rain to tropical sun. Since you will be spending a lot of time outdoors you should hope for the best and plan for the worst.

Can I camp on the MAD5 site?
We’ve had a single guest asking this question, year after year, and the answer is: YES. Shoot us a message to mad5@madfeed.co and we will do our best.

What if I forget my ticket and/or name?
Just let us know and we’ll figure it out together.

What in the world have you been up to for the past two years?
Quite a few things: We’ve launched a partnership with Yale to build an annual leadership summit; VILD MAD (Wild Food): a curriculum and school program on foraging and cooking with wild food; some big events with the World Bank and Sydney Opera House; a foundation in the US; and many other things still in the making.
